Cauliflower is versatile vegetable that is widely used in low carb cooking. Raw, roasted steamed or pureed have been the norm until some smart person “riced” it.
The change is weather inspired this recipe (along with the mega supply of pumpkin I got at Costco). This is a super quick and easy recipe to satisfy pumpkin and coconut cravings.

There has been a run on frozen cauliflower rice in my town! This shortage is occurring during my current addiction which lead me to a great method to make my own. Riced/crumbled/”slawed” vegetables are an easy way may a quick and tasty stir fry, main dish or side dish. Let’s get inspired!
I have been inspired by the recent availability of frozen riced cauliflower in the regular grocery store. When I first became aware of the product, it was spotted at Trader Joe’s.
